This Cinnamon testing initiative is part of the larger, more comprehensive, Lead Safe Mama, LLC Community Collaborative Laboratory Testing Initiative — a community directed (and community funded) project through which we have sent over 700 community-nominated products in to independent, third-party laboratories for scientific (rigorous, replicable, accurate) testing for Lead, Cadmium, Mercury, and Arsenic — since the project began in March of 2024.

We’ve updated and published our comparative Cinnamon chart (with lab test results from sending eleven different Cinnamon products to independent third-party laboratories to have them tested for Lead. Cadmium, Mercury, and Arsenic) with the intention of highlighting the following points:
- “Abstract”, aka “TLDR”: Our recommendation is that you stop using Cinnamon — for all the reasons noted below (safer alternatives are noted and linked below as well).
- In this chart, the Cinnamons tested are arranged in order of the Cadmium level found — ascending.
- Cinnamons that may test positive for lower levels of Lead, may also test positive for higher levels of Cadmium (a known Carcinogen).
- Cinnamons that may test positive for lower levels of Cadmium, may also test positive for higher levels of Lead (a Neurotoxin and a Carcinogen).
- Cinnamons may also test positive for extremely concerning levels of Mercury (even if they do not test positive for any Lead at all).
- Test results for 11 Cinnamon products are shown in this chart:
- The 11 products tested to date include 4 Cinnamon Stick products and 7 Ground Cinnamon products.
- 100% of the eleven Cinnamon products shown in this chart tested positive for Cadmium.
- 9 of the 11 products (82%) are organic Cinnamon products. 100% of the Organic Cinnamon products tested were positive for concerning levels of Cadmium.
- 10 of the 11 Cinnamon products (91%) that we sent to the lab for independent, 3rd-party testing tested positive for Lead.
- The Organic Cinnamon product with the HIGHEST Lead level had the LOWEST Cadmium Level.
- The Organic Cinnamon product with the HIGHEST Cadmium level – also had a very high level of Lead, plus it tested positive for Mercury and Arsenic as well.
- The ONLY Cinnamon product we tested that tested “non-detect” for Lead (with a low threshold of detection of 5 parts per billion) had the second HIGHEST level of Mercury of all of the Cinnamon products tested (an alarming amount of Mercury, actually).
- There’s no safe level of Lead exposure for human beings (all federal agencies agree with the scientific and medical consensus on this point). There is also no safe level of Mercury exposure for human beings — and especially for children.
- Year over year comparative testing of one product (the 365 Organic Whole Foods Ground Cinnamon), demonstrate that the amount of Lead and Cadmium in a Cinnamon product is not predictable — even when buying that product from the same brand, even if the brand is a “Trusted Brand”.
- Note: never trust brands. Brands are a collection of marketing and ideas. Trust SCIENCE instead.
- Even with only small amounts of Cinnamon used daily, the exposure is a non-zero risk, exacerbated by the fact that the impacts of toxicant-exposure are cumulative over a lifetime (especially given most detox protocols simply do not work, and even can cause additional harm).
- The graphic below demonstrates how much Lead contamination a small amount of contaminated cinnamon can contribute to a finished product (scroll down).
- 100% of the Ceylon Cinnamon products tested positive for Cadmium (again – a known carcinogen).
- The Cinnamon that tested positive for the highest level of Lead that we found was a Ceylon cinnamon.
- The two Cinnamons that tested positive for the highest levels of Mercury were Ceylon Cinnamons as well.
- The current trend to consume large quantities of Ceylon Cinnamon on a daily basis (one or two teaspoons daily is recommended by many “healthcare practitioners” uneducated about the toxicant contamination of Cinnamon, and the related risks) as a health protective measure is not based in science and has the potential to be extremely harmful to those partaking in that practice.
- Conclusion: While Cinnamon may have historically had health-protective properties / beneficial qualities, the contamination levels ubiquitous in modern Cinnamon products likely entirely negate any potential health benefits (at best), and regular consumption of modern Cinnamon (regardless of the type of Cinnamon — but including Ceylon Cinnamon) is more likely to cause harm than to impart benefits.

Additional Thoughts
- Our Recommendation — Lead Safe Mama, LLC is not a healthcare provider, nor are we associated with one. Instead we are experts in heavy metal toxicity and the following considerations are solely based on the aggregate concern for heavy metals exposure over a lifetime.
- With the recently documented rise in 17 cancers in Generation X and younger, and the associated links to diet (specifically including the fact that many of these cancers are GI system related), removing known carcinogens from our diet is the next logical step based on this data.
- The link between cancer and ultra processed foods is part of these new concerns brought up by the scientific and medical research communities.
- Cinnamon is inherently an ultra processed food (even if it might not seem like one at first glance because it is a single-ingredient food).
- If you want to strive for living a long life, a cancer-free life, a disease-free life — please consider avoiding Cinnamon (and other foods that test positive for high levels of Carcinogens – like Cocoa, Seaweed, Matcha, Peanut products, Sunflower Seed products, etc.) entirely.
- Instead choose other flavors for your foods that are less likely to be heavily contaminated with heavy-metals (natural vanilla — very easy to make at home, here’s a great “how to” video —, fruit flavors, and more — for more ideas on the types of products that have tested safe, please see the list of products – below – that tested “non-detect” for toxicants when we sent them to the lab for independent, third-party testing).
- In general please consider avoiding ANY dried, packaged, powdered – or whole, processed spices if at all possible (not just Cinnamon). Use whole fresh (non-dried, non-powdered) spices instead.
- Key Point: While it might seem like “everything is contaminated” — this is simply not true. (Please stop saying that! :-)) There are safer choices available:

- How can I detox?” — Most detox protocols are heavily Lead-contaminated and quite dangerous. This is the only one that is not (and it can be procured for free — if you grow it yourself — OR practically free if you buy it at the store!) – link with info (please read the related, linked science in this article).
- Rely on science — Look for out the ACTUAL lab test results (provided by Lead Safe Mama, LLC — links here —, or provided by the manufacturer of the food or other product you are curious about, ask them for the “COA” — Certificate Of Analysis — for heavy metals testing of the product in question . Do your best to understand this concern and use the information to make safer choices for your family moving forward.
- Don’t Worry! —Worry is never productive, especially worry about past exposures! You can eliminate worry in your life by making science-backed informed choices (uninfluenced by companies and uninfluenced by “influencers” online).

Important Background:
What is an Action Level?
Please note the following key points:
- The 2021 Proposed Action Levels Are:
- 2 ppb — Mercury
- 5 ppb — Lead
- 5 ppb — Cadmium
- 10 ppb — Arsenic
- These 2021 levels were proposed as “Action Levels” because they are (in fact) protective of human health (these are levels that specifically were proposed with the health and well-being of young children in mind).
- An “Action Level” is NOT the same as a “Maximum Allowable Level.”
- Many food manufacturers misinterpret guidance on heavy metals to mean “allowable levels” and consider it reasonable for products to test positive below these levels.
- This is a (perhaps intentional?) misunderstanding/ misinterpretation the food industry makes — a misunderstanding food manufacturers use to justify the presence of heavy metals in products.
- Heavy metals accumulate in the body.
- It is the cumulative/ aggregate impact of heavy metal exposure (over a lifetime) that makes even small/ incidental/ seemingly trivial exposures particularly damaging and dangerous. You can read more about that here.
- Once a food product has the amount of heavy metal (Lead, Cadmium, Mercury, or Arsenic) noted (above) as the “Action Level,” that product is officially considered (by the scientific and medical community) unsafe for consumption by children as the toxicants (found at-or-above these levels) are in the range of heavy metal levels that have been demonstrated to cause lasting harm.
- Action Levels are unrelated to serving size.
- Action Levels are relevant for any amount of a food product that may be consumed (any quantity of the food in question).
- PPB (parts per billion/ ppb) measurements are a percentage (albeit a very small percentage) and apply to any quantity of the food product tested.
- For more discussion about serving size considerations (and why relying on “serving size” to limit toxicant exposure is not a relevant metric/ not a metric protective of human health), read this article.
- These “Action Levels” proposed in 2021 are the levels at which the scientific and medical community believe the manufacturer (or government) needs to take ACTION to fix the problem.
- One “Action” would be for the manufacturer to take steps to reduce the levels of toxicants in the food product.
- Another “Action” would be for the manufacturer to cease sales of the product until the product could be made safe.
- Another “Action” would be for the manufacturer to inform the public that a specific food product has an unsafe level of the metal detected at-or-above the “Action Level” — making a highly-visible public announcement regarding which relevant batches of the product should be recalled/ no longer consumed.
- These Action Levels (which were proposed with the Baby Food Safety Act of 2021) were not arbitrary toxicant levels, but were proposed because they are the levels most protective of human health. However, the Baby Food Safety Act of 2021 was not passed into law.
- Regardless of the fact the Baby Food Safety Act of 2021 never passed into law — and it is therefore legal to have foods and supplements marketed for consumption by children test positive for Lead, Cadmium, Mercury, and Arsenic at-or-above these levels — these Action Levels still reflect the current (modern/ relevant) advice of the medical and scientific communities as levels both achievable by the industry and safeguards of infant and toddler health.
- Food and supplement industry lobbyists fought against formalizing these proposed “Action Levels” as a government standard, alleging the levels were unachievable.
- The list of 103 Lab Tested safer choices (below) clearly demonstrate these Action Levels as achievable across a range of food types (salt, flour, coffee, oatmeal, chia seeds, hemp seeds, soy milk, packaged fruit-based snacks, beverages, and more).
- All federal agencies agree with the scientific and medical communities’ consensus that there is no safe level of Lead (and Cadmium) exposure for children. The impact of toxicants exposure is cumulative over a lifetime and if we can remove sources of exposure (known, tested, confirmed sources exposure) for children — it is our obligation to do so.
- The legitimacy of these levels as “Action Levels”/ “Levels of Concern” (even though they were not adopted as law) is mirrored by the legitimacy of the American Academy of Pediatrics’ level of concern for Lead in water, which is 1 ppb despite the FDA’s official “level of concern” for Lead in water being 15 ppb (you can read more about that here).
Sectoin #7) Industry Says these Action Levels Are
“Simply Not Achievable”
To reiterate: While the packaged, processed food industry would have consumers (and the government) believe the standards proposed in 2021 are unachievable, this industry position (an oft-rearticulated response to nearly every set of laboratory test results for food and supplements that we have published to date) is simply not true.
It is possible to make safer processed, packaged food products and supplements that fall well below the safety limits for toxicants proposed within the Baby Food Safety Act of 2021. To wit, the products listed below (the first section of the list below) tested “non-detect” for Lead, Cadmium, Mercury, and Arsenic — several even tested non-detect for Lead with the low threshold of detection being “less than 1.5 ppb.” This testing has all been done as part of the Lead Safe Mama, LLC Community Collaborative Laboratory Testing Initiative – which began in March of 2024.

Products Removed from the Above “Lab-Tested Safer Choices” List
The three products noted in the numbered list below were previously on the Lead Safe Mama, LLC Lab-Tested Safer Choices List, but were removed after 2025 retesting found traces of toxicants present.
In each case (for the three products noted below), the retests detected very low levels of toxicants — consistent with the idea that these products are still relatively cleaner choices compared to similar items in their categories. However — even though these products could still be classified as “cleaner” by nearly every standard — we only include products on the list above if the most recent lab results for that product show non-detect levels for all four metals we test for (Lead, Cadmium, Mercury, and Arsenic), or “safe by all standards” for Arsenic levels below 10 ppb with no other metals detected. So while these three products tested positive for very low levels of toxicants with the most recent round of lab testing, they no longer meet our standards for remaining on our Lab-Tested Safer Choices List.

More Key Points to Consider:
- There are almost no reasonable safety limits proposed for toxicant contamination (heavy metal contamination specifically) of foods and supplements consumed by adults (or by the general population) in the United States.
- Any available proposed safety thresholds (and guidance) for foods and supplements consumed by adults are not currently set at levels protective of human health given practical/ actual consumption patterns of foods (vs. manufacturer defined serving sizes).
- The above point is especially important given children eat all foods, not just foods marketed for consumption by children (for example: Find me a pre-teen that won’t go through an entire 5-ounce/ 5-serving bag of potato chips in one sitting)!
- Our focus is (as always) on the health of children.
- By applying the standards proposed by the Baby Food Safety Act of 2021 to all foods and supplements, we are working more in-line with standards that protect human health (for all!) given all scientific and medical experts agree there is no safe level of Lead exposure for human beings.
- Said another way: You would never be eating a snack chip out of a bag and say to your 5-year-old child “this product is only marketed for consumption by adults, so you cannot eat it.” That would be ridiculous. Kids eat what we eat, so everything that goes into our bodies in an attempt to nourish us and support our health and well being should be appropriate for any age consumer (not just a demographic designated by the manufacturer based on irrelevant age-group related toxicity standards for a specific product or ingredient).
- Remember: There is no safe level of Lead exposure for human beings. Period.
- This is a non-negotiable point that everyone in the scientific and medical community — everyone who researches Lead poisoning — agrees with.

How are the metals getting into our foods? Through the soil? How are they getting into the soil?
much of it is due to capitalism. the fallout of overproduction causes an imbalance of heavy metals in the environment. Things like mining, industrial production, manufacturing, transportation, all come together to create a pretty toxic environment which impacts the soil, to the air, to our water. Heavy metals are naturally occurring but they’re overly prevalent now and pose a risk at such a level as they do because of human activities that are in direct opposition to nature :/

We have not found one. The question is bigger: If you knew an ingredient had the potential to cause cancer for yourself or your family – would you choose to use it? Some of us (those – like me – who have a history of cancer in their family [in my family the cancer fatalities and survivors include: My late-mother, my husband’s late-mother, my late-father, my late-grandmother, my late-grandfather, my sister, myself… and others], with nearly every relative in the recent generation (my parents’ generation, baby boomers – my parents were born in 1942) living much shorter lives than their parents and dying of some form of cancer), will choose to avoid that, even if the risk is very very small. It is – by one choice – a risk not worth taking. Others of us may think that having that ingredient in their life (chocolate, cinnamon, cassava, seaweed, potatoes, rice, etc.) is critical for them to enjoy life and they don’t have a concern for the risk of cancer in their immediate family – so they choose to use the product (perhaps they will use it less often in response to this information?) In any case the hope is that future generations will be healthier as a result of being armed with this science. This may mean that future generations will not have the cognitive impacts and developmental considerations that current generations are experiencing in record numbers – and those future generations may therefore be more prepared – and have the cognitive capacity, patience, and focus – to save the world by fixing this problem created by their ancestors. Maybe?

From the research I did when arsenic in rice first became a mainstream concern, here are your best choices. Basmati and Jasmine have the lowest levels of arsenic. Region is important – rice from Southeast Asia is lower in arsenic than American rice. Basmati rice from India or Pakistan, or Jasmine rice from Thailand are the best. If you go with American rice, always choose California-grown (Lundberg is a great company as they routinely test their rice for arsenic levels). Particularly avoid rice from Texas, Arkansas, and Louisiana (anywhere from the south), as they have significantly higher levels of arsenic. Also avoid brown rice, as more arsenic is absorbed in the bran and germ. Choose white rice, instead. Rinse the rice until it runs clear before cooking. My personal go-to is Mahatma Jasmine rice from Thailand.

I think I found a safe cinnamon! The company posts their tests after each batch. The issue is that they’re expensive.

They don’t share their low threshold of detection on their lab report, and their most recent lab report shows that the product tests positive for both Lead and Cadmium (at levels higher than quite a few already listed in this chart). We have purchased some for testing.

Has anyone else asked about Red Ape cinnamon? They say that they third party test each batch and that Ceylon consistently is higher in lead than cassia cinnamon. I, for one, am still going to make pumpkin pie for Thanksgiving every year so I want a cinnamon that is at least LOWER in bad stuff for the occasional use. Curious about red ape cassia product!
