What did you have for lunch today?

My husband keeps making me the most lovely salads this week, but I keep forgetting to take photos before I gobble them up. This (photo above) is the remainder of today’s salad at the moment I thought to take a photo!

These salads have been including some or all of the following:

1.) organic cherry tomatoes (cut in half and salted with one of the three clean salts from our Lab-tested safer choices list),
2.) organic lettuce (a range of different lettuces!),
3.) organic pumpkin seeds (may test positive for low levels of Arsenic but unlikely to test positive for Lead, Mercury, and Cadmium),
4.) organic red walnuts (same note as for pumpkin seeds),
5.) organic greek olives,
6.) chopped organic red onions (a great natural detox),
7.) crushed fresh organic garlic (same note as onions),
8.) chopped up organic cucumbers,
9.) organic red bell pepper slices,
10.) a splash of organic red wine vinegar (from our lab-tested safer choices list),
11.) organic kidney beans,
12.) organic chick peas (from Italy, on our lab tested safer choices list, sold in glass) — and
13.) sometimes I sneak (after he has served it to me) and put some cheese on top (or some vegan cheese)!
14.) sometimes he adds hearts of palm (chopped up into little circles)
15.) sometimes he adds marinated artichoke hearts
